if the chain is being counted as 512 parts then I assume the ball
bearings in the hubs are also being counted

Front wheel = 36 spokes + 1 hub + 1 rim + 1 rim strip + 1 inner tube +
1 tire = 41 parts
Rear wheel = 36 spokes + 1 hub + 1 rim + 1 rim strip + 1 inner tube +
1 tire = 41 parts + cassette
Cassette = 10 speeds + 8 (random number guess) spacers = 18 parts

So the wheels account for a further 41+ 41 + 18 = 100 parts

1 saddle + 1 seat post + 2 bolts on the saddle + 2 washers + 2
thingies that go on bolts + seat post bolt (2 pieces) = 10

how many ball bearings are used in a bike?

I don't know how many parts go into a headset, or shifters, or
chainrings, or bottom brackets ... someone else has got to count them.

I think wheels account for a lot more parts than that . Additional items for
front wheel with loose balls:
36 nipples + 1 axle + 2 cones + 2 washers + 2 nuts + 1 quick-release skewer
with lever + 1 nut for skewer + 2 conical springs for skewer + 18 (I think)
bearing balls = 65 additional items + your count of 41 items = 106 items
total for front wheel.
